    Put them in a wood box. Lots of air holes so they can breathe. No light. This will help regulate the humidity and prevent greening. They will last substantially longer.

    Also there is no rule saying you can cut each sprouted part into a three cubic inch piece and plant them in your yard. After you have big broad leaves on foot long stocks pile up about four inches of soil out to where the leaf tips are. Once the stalks collapsed and turn brown carefully dig through the soil. You have discovered the unlimited potato glitch.

        It’s pretty hard to mess up a potato. They are very forgiving. Take the same exact method. But instead of putting in a burrito mixing some butter and some parsley. Or maybe mix in some curry powder.

        Most of the time when you just boil a vegetable the things get sad. But potatoes can be awesome when they’re just boiled. Just add a little bit of flavor somewhere.

        As a homesteader:

        Corn needs intensive maintenance to stay alive.

        Chickens are much more chill than corn. But are expensive AF to raise for meat. Much better for eggs.

        Sheep. I can’t even entertain the idea because my one acre would be turned into mud by even one sheep. And sheep love parasites. Or more correctly, parasites love sheep. The vet bills are stupid high.

        Cows. Same mud problem as sheep on my property. I can’t afford the fencing for them. If you don’t milk that cow twice a day things go very wrong. Which means no road trips. No concerts. No life.

        But potatoes are easy.

    they do become poisonous in enclosed space when they are rotting, they produce a poisonous gas. Green ones are also toxic.

    You’re not supposed to keep them in the fridge, but keep them in the fridge. Out of the fridge they soften and sprout.
