I wanted tacos. I had tortillas and potatoes. I wanted latkes. I decided to make something that should not exist. Was it tasty? Yes. Was it a pleasant texture? Yes. Was it a bit much oil? Yes.

I added deep fried red bell pepper to the home canned beans after heating and mushing into refried beans and topped with smoked pepper jack cheese.

I added fresh red bell pepper and cumin to the latke mix. Sauce is sour cream, Sriracha, granulated garlic and onion, cumin, salt. It needed to be cooling, spicy hot and have some acid in it to balance all the fried food it was going to be on.

I’m definitely doing this again but without the tortillas. They really weren’t necessary. They didn’t add enough to justify the work and we don’t need the extra oil.

Cost per person, $2.75.

    Damn dude you got me wondering if I can fry latkes into taco shapes this year.

    The sauce you made sounds delicious on potato and the sour cream makes it a natural pairing for latkes. Beans as the protein element would keep it kosher.

    I think you’re onto something really cool here and the photo makes it look absolutely delectable.

      When I told my wife latke tacos she thought I meant latke as the shells. So you are on her wavelength. I’m considering it in the future with the beans as filling like you are. Gotta make the “shells” thin enough to fold but crispy enough to hold.

      Here is the sauce I used. But cut it in a quarter for two people.

        I make a rather thin hash brown by grating potato onto a paper towel lined plate with onion before putting another paper towel on top and microwaving for 2 minutes to par cook the potato before frying. I think it should be doable to use a similar technique to thin sheets of potato, just need a sort of maybe foil made mold to hold them while frying.

        I make something like that during Hanukkah already with bbq pulled chicken for latkes that have been fried in schmaltz. It seems like an easy thing to do a tostadas variation

    I decided to make something that should not exist.

    Nonsense! Food fusion is one of the best parts of diversity and multiculturalism. It’s given us tasty new dishes from the beginning of history to the Columbian exchange up to and including modern times. From Hawaiian pizza to General Tso’s chicken to southwestern egg rolls to latke tacos. It’s all delicious!

    Looks delicious except for all the burnt parts. What I know now, is enough to never allow me to give anyone overcooked food… Burnt tails and such. Those things carry carcinogenic compounds galore.
